A Recipe for Success: Jalapeño au Gratin

Jalapeño au Gratin (Severs 7-8 people)

Ingredients
• 1/2 tablespoon oil
• 2.5 pounds Idaho potatoes (peeled)
• 2 cups heavy cream
• 1 ounces sliced jalapeño pepper
• 1 tablespoons Kosher salt
• 1/2 tablespoon white pepper
• 2 oz of grated Gruyere or Mild Provolone cheese

Instructions

  1. Preheat your oven to 350°F and grease a 9×11 baking pan with oil.
  2. Slice the peeled potatoes to 1/8-inch thick using a mandolin.
  3. In a sauce pot, simmer the heavy cream and jalapeños—just don’t let it boil. Season with salt and white pepper, then let it steep for 10 minutes.
  4. Layer the sliced potatoes in the greased pan, sprinkling each layer with salt and pepper.
  5. Pour the steeped cream and jalapeños over the potatoes, covering them completely.
  6. Cover the pan with plastic wrap, then top with aluminum foil, poking a few holes for ventilation.
  7. Bake on a sheet tray for about one hour and a half, until the potatoes are tender in the center.
  8. Remove the foil and top with grated Gruyere or Mild provolone cheese, and place back into the oven until the cheese is golden and bubbly.
  9. Serve hot and enjoy!
