INGREDIENTS


Teriyaki Salmon

    • 2 teriyaki marinated salmon fillet

    • 2 tbsp teriyaki glaze

    • 1 pinch Kosher salt

    • 6 floz (US) sushi rice

    • 1 oz shiitake mushrooms, julienne, sautéed

    • 1 oz salmon veg, for garnish

    • Cilantro, for garnish

    • 1 tbsp sweet and spicy soy vinaigrette

    • 4 floz (US) soy butter sauce

    • 1 tsp toasted sesame seeds

Soy Butter Sauce (1 Cup)

    • 2 tablespoons soy reduction

    • 7 oz butter

    • A small segment of orange zest

Sriracha Vinaigrette (1/4 Cup)

    • 1 tablespoon rice wine vinegar

    • 2/3 tablespoon sriracha

    • 1 tablespoon pickled ginger juice

    • 2/3 teaspoon fish sauce

    • 1 tablespoon sesame oil

Teriyaki Glaze (1/4 Cup)

    • 2 tablespoons teriyaki marinade

    • 2/3 tablespoon granulated sugar

    • 1 teaspoon minced ginger root

Salmon Vegetable Garnish

    • 16 oz carrots, julienne

    • 8 oz bean sprouts

    • 8 oz onion, julienne

Soy Reduction (2 tablespoons):

    • 1 tablespoon minced garlic

    • 2 teaspoons minced shallot

    • 1 tablespoon + 2 teaspoons minced ginger root

    • 1.5 tablespoons light soy sauce

    • A small piece of orange zest or juice

    • 2 teaspoons honey

    • 2 teaspoons brown sugar

Sweet and Spicy Soy Vinaigrette (1/4 Cup)

    • 1 tablespoon sriracha vinaigrette

    • 1/3 cup eel sauce

Teriyaki Marinade (1/4 Cup)

    • 2 tablespoons brown sugar

    • 2 tablespoons pineapple juice

    • 1/4 teaspoon ginger root

    • 1/4 teaspoon smashed garlic

    • 2.25 teaspoons light soy sauce

    • 1.5 teaspoons water

How To Make It


Preparing the Marinades and Sauces

    1. Teriyaki Marinade: Combine all ingredients in a stock pan, bring to a boil, and then cool to room temperature. Refrigerate until ready to use.
    2. Teriyaki Glaze: Mix teriyaki marinade, granulated sugar, and minced ginger root in a saucepan. Reduce by half, strain, and refrigerate.
    3. Soy Reduction: Combine garlic, shallot, ginger, soy sauce, and orange zest in a stock pot. Boil and reduce the liquid by three-quarters. Strain and mix with honey and brown sugar.
    4. Soy Butter Sauce: Boil soy reduction, reduce heat, and whisk in diced butter. Add orange juice.
    5. Sriracha Vinaigrette: Whisk together rice wine vinegar, sriracha, pickled ginger juice, fish sauce, and sesame oil. Refrigerate.
    6. Sweet and Spicy Soy Vinaigrette: Mix sriracha vinaigrette and eel sauce.

Cooking the Salmon

    1. Marinate: Marinate the salmon for at least 1 hour.
    2. Season & Sear: Season the salmon with Kosher salt and sear until golden brown. Brush with teriyaki glaze and bake to desired doneness.

Preparing the Dish

    1. Rice and Mushrooms: Place sushi rice in a bowl and top with sautéed shiitake mushrooms. Pour half of the soy butter sauce over the mushrooms and the rest around the rice.
    2. Salmon: Place the cooked salmon on top of the rice.
    3. Vegetable Garnish: Toss carrots, bean sprouts, scallions, and cilantro with sweet and spicy soy vinaigrette. Sprinkle with salt and place on top of the salmon.
